Powdered eggs are fully hydrated eggs which are useful for mass production. These eggs have many benefits as they are lower in price, do not use much space with their relatively small volume and have a long shelf life. Furthermore, the powdered eggs do not need to be refrigerated. The powdered eggs have a variety of functions. For instance, you can use dried egg powder while cooking or baking and you can also add water to make the powder fluid again.
Powdered eggs have been used since 1912. Mainly, the dehydrated eggs were used during wars because the dried egg powder had a longer shelf life than the regular liquid eggs. The modern egg powder manufacturing process was introduced in 1930. This is the same period where the first freeze-drying process was installed. Before this method was in place the Chinese whipped up the eggs and let them dry in the sun. Once the eggs were fully dehydrated they would ground the leftovers to create powdered eggs.
